I recently purchased a Extreme Pro 2TB and reformatted for mac journaled and copied a bunch of files on it. This initial copy seemed to work. But now when I plug it in, it will no longer mount on my MBP. I have tried different cables, nothing seems to make a difference. I have only have this drive for a week.

You can try the steps below and see if the external SSD will mount on your Mac:
Force mount the SSD in Disk Utility
Select the SSD from the sidebar of Disk Utility > select the external drive under “External,” click Mount.
Run First Aid in Disk Utility
With the drive selected, click First Aid to check and repair file system errors in the external SSD. Then try mounting it again.
Format the SSD
In this case, you need to back up your important data on the external SSD first. If necessary, recover your files from this unmountable external hard drive before performing a reformat.
Once you’re sure all data are safe, select the drive in Disk Utility, click Erase, choose a format (APFS or exFAT), and recreate the file system so it mounts cleanly. [ A related blog - External Hard Drive Not Mounting Mac? Fix It without Data Loss ]
