are all heaphones with a 3.5mm jack compatible with the sansa fuze?
Yes, essentially, but be sure that they are a basic stereo headset, meaning three metal bands with two insulating rings. The Sansa is quite happy with 16 ohm headphones, and it they’re efficient, 32 ohm.
