I have a (relatively) small boot SSD and a large RAID array based on standard HDD. Can I use the ReadyCache to cache the RAID volumes only and leave the SSD volume alone?

No, readycache only works with the system drive i.e. the drive where the OS is installed. It will work with RAID volumes but only if the RAID volume is the system drive. This is not recommended for computers that already use an SSD as the system drive.
