Just started backing up my 3tb WD red drive to this new external drive, and it frequently drops to 0bytes/sec, hangs there for a while (often 5 or 10 minutes) and then either starts transferring around a couple of hundered kb/s or jumps back up to 80mb/s
Any advice on how I can fault test this?

A lot of factors can cause this, for example. if you were just looking at a file and then transfer it, some of the file is buffered in RAM and scoots right along, then when buffer is empty, it needs to be read again so it slows down, speeds up and then continues at max speed. Also, conditions used to transfer; wired vs wireless, gigabit vs slower wired speed USB 2 to 3, and so on under different situations.

it’s a usb 3 drive, and i’m transferring a lot of media, both music and films - it doesn’t seem to make any difference which is being read.
yeah i thought perhaps it was at 0 bytes and reading into memory, but it was hanging for ages rather than just slowing down. and in fact now it is doing it waaaay less (although like you said, it’s dropping to a couple of hundered kb/s, but not stopping anymore)
Reboot all usual suspects and then try again.
