  1. Can I use it to back up iMac and iPad2? Perhaps with a cable adaptor to fit the iPad?

  2. Will I have control to backup my files without backing up their respective Applications? I’m moving to another country and will buy a new iMac when I get there. I want to take my Notes, Pages, and Numbers documents with me.

Well yes you can backup your iMac and iPad using the Time Machine application. And yes you will have a control on your backup files as you can restore them too.
